Sunday Dinner: Spicy Turkey Burgers with Mango Salsa

This weekend was busy, but fun! I had a baby shower to attend yesterday, for a friend who is having twin girls! And between church and painting… the rest was a blur.

I have been wanting to do an accent wall in our family room for sometime now, and finally made it Taylor’s birthday present to do some updates in the room that we probably use the most. I got him a tv stand and matching end table. We were still using something we found in his parents basement when we moved in our house, as a tv stand so, it was time for something new and different and something of our own.

I decided on a terra cotta color for the accent wall and it turned out lovely! We were both a little nervous until it dried, because it did look really peachy going on. Thankfully, it dried to the perfect color of a Southwest, organgey-brown, red. It really makes everything else in our family room so cozy and warm. And now, I am inspired to do more accent walls in our house! We’ll see how that goes!

Our new accent wall!

For Sunday Dinner I made spicy turkey burgers with mango salsa on a whole wheat bun! It was yummy, healthy, and the perfect weekend to grill! It is in fact, getting more and more spring like here in North Dakota!

Here’s What You’ll Need:

  • 1 Package of Lean, Ground Turkey (It was 1.5 pounds and made four burgers)
  • 1 Tablespoon McCormick Southwest Seasoning (No Salt Added)
  • 1-2 Teaspoons Garlic Powder
  • Mango Salsa (I cheated and bought some from our local Cashwise grocery store)
  • 4 Whole Wheat buns
  • Avocado, sliced

In a medium bowl, mix turkey, garlic powder, and Southwest seasoning. Form into four equal patties. Place on grill and grill until done on each side. While grilling, cut buns in half. Slice avocado, and prepare salsa. Once burgers are done, place burger on bun and top with mango salsa and slices of avocado. Enjoy!

Did I mention this is 21 Day Fix approved. This meal would equal, one red, two yellow, one blue, and one half purple! Since starting my new lifestyle in January, not only did I lose almost 11 inches but, my Rheumatoid Arthritis has been so much better and my psoriasis has pretty much cleared up and I am now a BeachBody Coach!! I am so excited to help people change their lives through eating and exercise! I will be holding a couple of challenge groups coming up, so if you are interested in trying Shakeology or a BeachBody program, please feel free to contact me with questions! And the best part, I get to be your coach for free!

Happy Monday! Xo
