I Dream of Cheesecake

Even though I try to eat healthy most of the time, every now and then I NEED my sweets! My guilty pleasures in life are Kate Spade & Corral boots, The Bachelor, and cheesecake, and not in any particular order! πŸ™‚


This weekend, I had my dad over for lunch and decided to make salmon, potatoes, green beans, and CHEESECAKE! Oh and for dinner, we had kneophla soup, homemade of course! The cheesecake for sure stole the show! It’s so beautiful and looked like a unicorn of animal cookies! And it wasn’t that hard to make!



Frosted Animal Cookie Cheesecake


  • 2 1/2 cups of frosted animal cookies
  • 2 tbsp of butter (salted) – melted

Preheat oven to 325 degrees. Using a 9″ springform pan, spray with non-stick cooking spray. In a food processor, crush the animal cookies into a crumble texture. Add in butter. Press the crust into the bottom of the pan. Bake for 20 minutes. Remove from oven and let cool. Reduce the oven to 300 degrees.


  • 24 oz. cream cheese or 3 packages (I used the greek yogurt cream cheese) – room temperature
  • 1 cup sugar
  • 3 tbsp of all purpose flour
  • 1 cup sour cream (I used light)
  • 1 tbsp of vanilla extract
  • 4 large eggs
  • 2 cups frosted animal cookies, crushed or chopped roughly

In a mixer bowl, mix the cream cheese, sugar, and flour until smooth and well combined, at a low speed. Add in sour cream and vanilla. Add in eggs one at a time. Stir in 1 cup of crushed Β animal cookies. place half of the batter into the prepared crust. Then use remaining cookies to crumble over, top with remaining batter. Place springform pan in tinfoil so that no water can leak in. Fill larger baking dish with water, so that the water will come half way up the springform pan. (This helps prevent cheesecake from cracking while baking). Bake for 1 hour and 35 minutes. Turn the oven off and let cheesecake rest in oven for 30 minutes. Then, open the oven door and let cheesecake rest for another 20 minutes before taking out. Let cool in fridge overnight.


  • 2 cups of heavy whipping cream
  • 2 drops of red food coloring for a pink look
  • 1/2 cup of powdered sugar

Beat cream in mixer bowl until stiff peaks form. Add in food coloring, enough, so it turns a LIGHT pink. Mix in 1/2 cup of powered sugar and mix until combined. Carefully frost the top of the cheesecake with the topping and place in fridge.


  • Whole, extra frosted animal cookies
  • Canned whipped topping
  • Pastel Sprinkles

Before serving, put dollops of whipped topping on the cheesecake and place a cookie in the center of each dollop! Have fun and make it your own! Add sprinkles and serve!

11 of My Favorite Apps

Our smart phones are more and more apart of our daily life, wether we like it or not! It’s crazy how far they have come in the past 10 years! I can flip through my Bible, catch up on my favorite podcasts, edit and post a picture, and pin my favorite recipe, all on my phone! Phones are just used to call people anymore! I wanted to share with you my favorite apps on my phone! Most of them, I use daily!



  1. Google Drive

    I love having access to important documents and sheets right at my finger tips, when I don’t have access to my laptop. It’s nice to have everything to share and send easily. Especially with my business, I need to look up goals, track progress, and my business. I love having everything right there.


  2. Ibotta

    This app is SO awesome! I love that you get to earn money for grocery shopping! If you are anything like us, and don’t get to town for groceries that often, it’s easily a $300 bill. This app allows you to shop for items that you need, where you can earn cash back! When you accumulate $20 in cash, you can cash out, and use it toward a grocery purchase!     3. She Works His Way

    This app is great for daily devotionals for ladies who have their own business, are entrepreneurs, or are just wanting to try a new devotional! It is a $2.99 download, but you get a new, daily (5 days a week) devotional, with scripture. It’s a great way to be in the word and be inspired daily!



    4. She Reads Truth

    This is another one of my favorite devotional apps! You have access to lots of daily devotionals as well as, access to the Bible, for early scripture lookup! I use this app a lot for church, because half the time, I forget my Bible! (I swear, I would forget my head some days!)


    5. Podcast App

    Some of my favorite and more inspiring things I listen to are podcasts! I love listening to Joel Osteen, Chalene Johnson, and Women Inspiring Women podcasts! As well as other sermons or inspirational, and business related podcasts! I listen a lot in the summer, during walks and even while I mow lawn! It feeds my soul.


    6. The Weather Channel

    I love having the weather easy to access on my phone. We NEED it here in ND! I swear, it can snow and be 65 degrees all in one week here! πŸ˜€ It’s also great for tracking those perfectly timed summer rains or snowstorms in the winter! I would be lost without it! I also like looking ahead to the 15 day forecast!


    7. Beachbody On Demand (BOD) & My Challenge Tracker

    I love having all of my workouts at my fingertips! It’s great for traveling, so you don’t miss a beat with your workouts. The best part, is that you can download up to 3-4 workouts, so it doesn’t take data! And you can check them in and keep track of your progress with the My Challenge Tracker app, as well as check in with your nutrition and progress! My Challenge Tracker is the private app that I use with my private fitness groups! And it’s great to keep in touch with my girls is they or I am on the go! πŸ™‚


    8. Pinterest

    Because if you don’t have Pinterest, you need it! I have so many pins and inspiration boards, mostly for food and recipes! And who doesn’t love pinning all the things you WANT to do or make, but don’t have time for! πŸ˜€


    9. WordSwag

    I love this app for adding fun text and editing photos! It’s a great app to find lots of different fonts and even neat background, or you can use your own too! They also have filters and different sizing options for all of your photo needs! It’s $4.99 for the download, but so worth it, to have lot of design options at your finger tips!


    10. Photofy

    I love this app for editing photos! It’s great to resize and add fun filters, as well as art and even text! It’s virtually endless! The app is free, but there are optional in app purchases for around $2! It’s a great way to make your photos stand out!


    11. Instagram

    And of course, Instagram! It’s one of my favorite apps, probably even more than Facebook these days! I love the new-er-ish stories feature, that allows you to share tis-bits of your day with your followers! It’s also the best social media app, in my opinion to express your creativity and truly DESIGN your own profile and layout! It’s also fun to get to connect with other people who are just like you, buy using your favorite hashtags, to describe yourself! πŸ™‚

80 Day Update!

I haven’t been posting as much about my own journey lately on PURPOSE! I have been trying to focus on the amazing girls in my group! I mean results are flowing in and it makes me SO proud! Weight Loss?

So far, nothing! But I have also tried my best to stay off of the scale! This is SO hard for someone who has struggled with eating disorders in the past! SO hard! But that number on the scale doesn’t define who you are as a person or on your journey! It’s just a number! And muscle also weighs more than fat, and I am definitely putting on muscle and leaning the heck out! I am proud! And honestly a few years ago, if I wasn’t losing weight, I would have quit or thought that I wasn’t being successful. The scale is EVIL! Pictures ae truly worth a thousand words!


What are the workouts like?

We are on phase two now, so they are harder! I feel like I am staring over! haha! Uncoordinated much?! πŸ˜€ Β But I never have felt SO strong and confident with myself and my journey!


What are you eating?

After phase one, we had to recalculate our nutrition plan, which is timed (just telling us WHAT to eat and WHEN to eat it – taking out the guess work!) For phase two, I am in between plans, so for now, I am seeing how my body feels and if I need to go up in calories and food, I will! No shame in eating more! You want to be fueling your body and not feeling hangy and sluggish! So far, I feel fueled!

Lifting heavier! I might actually have to invest in some heavier weights! πŸ˜€ And just feeling confident in my body again! Even though I am a health and fitness coach, it’s been a long time since I have felt THIS good! I blame all the workouts and nutrition! πŸ˜‰ I actually feel good about eating now and have a good relationship with food, FINALLY! In high school I struggled with starving myself and even though I was barely 120 pounds at 5’6″, I thought I was fat and ugly. Later, after I had a job where I was constantly put down, I would turn to food for comfort, and binge. But today, is different. I can truly say that I think about food differently now, and it’s something that I am proud of!



Having rheumatoid arthritis isn’t a plus for this program. I am even more tired most days and my hands and feet hurt more from holding weights, so I try and switch up holding positions, but I do my best! Sometimes, I don’t get all the reps in OR having to modify. Lately, I have been feeling it more in my back and shoulders, and elbow. I know the last time I went to my rheumatologist, she said it was moving into my tendons more, which would explain all of that. But like I said, I feel stronger than I ever have and I am proud of myself for pushing ME! πŸ™‚

Why I love GMO’s and not so grass fed beef

As a born and raised farm girl, GMO’s and grass fed beef were things that weren’t really talked about just a few years ago. Growing up, I would ride in the combine with my grandpa, while he was harvesting his GMO soybeans or corn. As a kid, I would be going for a bike ride while our neighbors and my dad sprayed pesticides or insecticides on their mid-summer crops. My parents didn’t buy anything organic. My dad would bring me whole wheat kernels to eat while he was hauling wheat to the elevator. And I feel like I turned out okay! πŸ™‚


Now, my husband sells his cows and steers to “finisher” feed lots, where they are fed corn and other grain to be “finished” off for a better quality, and tasting meat. Most of your better steaks and burgers are not grass fed at all. It’s honestly bad marketing. And guess what, grass fed doesn’t mean it’s healthier. It will maybe save you a few calories and it has a “cows tail” more omega 3’s fatty acids, but you can get those from fish too.




I guess what I am trying to say that when you buy “organic”, “non-GMO”, or “grass fed”, you are really only paying for a “designer” tag. Just like buying a purse or shoes! And of course, I am going to use a fashion example! πŸ˜‰ The same sandals that you buy at Target or Micheal Kors, will get the job done and be a great shoe, but you are only paying for the name of one.


It is crazy to no end, that when most people are asked, “what is a GMO?” They have NO clue what it actually means OR what foods are actually genetically modified. First GMO means “genetically modified organism”. If it weren’t for GMO’s there would be no crops to harvest because most bugs, weeds, and other pests, would have taken over the field. They help even in drought conditions, so the seed can survive. GMO’s even help the soil and they are a great option for ever changing soil conditions and crop diversities. For example, GMO’s increase crop yield therefore less ground is needed to produce more crop.


GMO’s are also the reason why we don’t eat bananas with seeds or why ruby red grape fruits are truly ruby red! This picture from the Genetic Literacy Project is truly amazing and mind blowing! How would food look like without GMO’s?!



In fact, what most people don’t know is that we have been eating GMO’s for nearly 20 years!Β 


And this is truly the beginning! GMO’s can be used for great things, like creating allergy free nuts! My own mom is allergic to several foods, and hasn’t been able to eat dairy products, fish, or nuts most of her adult life. How amazing would it be to have an allergy free peanut butter spread!?


A sweet potato is a natural example of most liking the very first GMO, where bacteria got into the plant organism of a potato plant and puffed up the root to make it edible and sweet! That is right, sweet potatoes were NOT naturally grown at first!


But what foods are actually GMO today?!


In this GREAT blog post from Prairie Californian, she give a great breakdown on GMO’s and goes on to explain, that most foods that have been genetically modified are actually found in oils and syrups, and not in the product sections, like you would think! Yes, some are in corn and papaya, but for fresh produce, that is about where it ends!

Most people also don’t know that the ONLY foods that are genetically modified are most corn, soybeans, sugar beets, canola, and papaya.


I believe that people NEED to be EDUCATED before they can truly say WHY they buy something, because most people aren’t. If you don’t have the luxury of growing up on a farm or marrying a farmer, you have to stay educated on farming and WHERE you food actually comes from. And with that, I am thankful to have a choice of what foods we can buy. Some countries do not have our technologies and are being plagued with droughts or malnutrition, that GMO’s could help with!


And as farmers, we NEED GMO’s in order to farm and do our job! GMO technologies have done a lot for the agricultural world and it’s about time that people get educated… GMO’s are NOT bad, horrible things. They are a great use of technology and literally carry the future of our farming industry in their hands. So when you eat a banana without seeds or a grapefruit that is ruby red, remember to thank a farmer and the agricultural technology that brought it to you!

Grass Fed.Β 


Are ALL choices, but we need to be aware of not only false advertising, because let’s face it, EVERYTHING has a label these days. When we buy something we need to know WHY we are buying it and WHERE it comes from. I am not saying that grass fed or organic is bad, it’s a choice, but we need to be educated on where our food is coming from, and not just assume that just because something has a label, means it’s “healthier” or better.

Fashionista Friday: Rockin’ Denim on Denim!

I am getting spring fever over here! I am ready to be wearing pastels and fun, cute spring clothes and especially dresses without leggings or tights, and not freezing your legs off! πŸ˜‰


Growing up in the 90’s rocking denim was an understatement! I am glad the trend came back! I actually wore this outfit, this week for a girls luncheon and later for a quick grocery run! It’s so fun and comfortable! I paired it with cute tennis shoes and you could wear it without the faux suede vest for a spring outfit too!

I was always scared to pull off the denim on denim in the RIGHT way! I think relaxed is best, and pairing it with cute accessories is fun and adds color!

Here are some of my tips for rocking the denim look!


  1. Light & Dark! Pair light and dark denim colors together! You WANT a contrast of color! Either the jeans should be dark and the top light, or vice versa! You don’t want it to match! I also think that skinny jeans just look better with this look!


2. Accessories! Like I said above, you want to have fun jewelry or something that can add a pop of color! For spring, a fun neon colored necklace, like this one would be great! I was going for casual, so I did a bronze feather necklace!

How fun is this necklace?! And it add SO much color!Β 

3. Keep your shirt neutral. I think to really pull off denim on denim, you should keep your shirt neutral, like a white, gray, or black! It makes the denim stand out and also keeps it more natural looking! Stripes is also great! That is what I am wearing! My top is from Maurices!


4. The Shoes! Shoes and bags always, ALWAYS make the outfit “pop” a little more! I chose casual, plus it’s freezing cold here! So kept my toes covered! πŸ™‚ BUT, I think a nude scrappy heel would be fun also! Especially for a summer date night!

My Favorite Devotionals

I get asked over and OVER again about devotionals and what I am reading! I love it and I also love to read and be in God’s word. The funny thing is, I always have loved them! My parents would buy me girls and teen devotionals throughout school. Β So, I thought I would share my top devotionals based on a few different categories! Here it goes!


Best Daily Devotional


This one is a great daily devotional for the WHOLE year. Each one has a main scripture reading, several more look up scriptures, a short prayer, and thought for the day! Taylor and I are currently working through this one! πŸ™‚


Best Teen Devotional


Elizabeth George is an AMAZING author for teen girls! And yes, I actually have done this one! She has great space in each book for journaling and she asks compelling, faith questions!


Best Couples Devotional


Taylor and I did this one a few years ago, but it brought up great points for couples either married, dating or engaged!


Love & Respect is another great one that I read when we were engaged! It’s a great read and just thinking about it, I need to read it again!


Best Devotional on Waiting/Patience


This one is amazing. No matter where we are in life, most of time we go through seasons of waiting! It’s understanding HOW to wait and how to find God’s perfect peace during your season of waiting!


Best Self Worth Devotional


A friend actually told me about this one, and it was amazing! Anyone who struggles with self worth or self confidence NEEDS to read this! They will surly be blessed!


Best Prayer Devotional


I am currently reading this one, and it’s GREAT so far! I have also been doing a prayer journal! I can’t wait to see what the Lord has in store for this 40 day prayer journey! Like the author says, if you don’t pray for it or about it, how can God bring it to pass?!


The Best Positive Thinking Devotional

Now, I know that some of these are BOOKS and not devotionals, but these two are my BEST and TOP picks for positive thinking! Both are probably THE best books I have ever read! Both give a positive outlook and give scripture references.


Best Overall Ladies Devotional


I have to say that this one, was one of my favorites! Because it also has a journal that comes with it! It is SO well written and brings out wonderful points! Lovely is STILL out there, we just have to look for it in the quiet, small places!

My Honest Review of 80 Day Obsession, so far

Today marks day 10 of my new, 80 day journey. So far, I feel energized and probably the strongest I have felt in a long time! I am empowered to keep going! I wanted to share with you guys how I am feeling and what things I have struggled with and small victories! If you have any questions about it or what I am doing, feel free to reach out to me! πŸ™‚

I just want to keep a virtual journal of my journey, in order to help keep myself accountable and maybe inspire someone to start their own health/fitness journey! πŸ˜‰ So my goal is to do a blog once a week to talk about my progress, victories, and struggles so far!

What day are you on?

It is week two, day 10!

Weight Loss?

Although I have weighed myself once since I started, we are actually discouraged from weighing ourselves, just because out bodies are under stress from doing something different, we can actually gain weight and feel bloated! I probably have lost a pound or so, but nothing major! I am just going by how I feel and taking a lot of progress pictures! And I feel like we as women, can get too obsessed about that number on the scale! That number doesn’t define us!

I started at 154 lbs.

My current weight is 152 lbs.

This is my one week before and afters! Before is on the left! I was honestly so surprised and how much I had leaned out in just one week!

What are the workouts like?

Honestly, the workouts aren’t that hard compared to other things I have done. But I should add in the word YET!! haha! Probably the hardest part is that they are longer than what I am used to! They are about 30-60 minutes, depending on what workout and what day it is! I am used to about 30 minute workouts, but they do go fast! Probably the hardest part is just the mental game to keep going! It’s not like your body is physically tired, it’s more about your brain plays tricks on you! But we do have a lot of other awesome ladies, who also work full time jobs who are COMMITTED to make this happen! Which is SO inspiring to see!

What is timed nutrition?

So with this program, we are doing timed nutrition. I think so many people hear this and get freaked out. And to be honest, so did I! BUT, it’s really not that bad! It just takes out all of the guess work for you, telling you WHAT to eat and WHEN to eat it! It’s actually easy! No counting macros or calories! Everything is already done for you! You just have to figure out what foods you want to eat!

What are you eating?Β 

I am not eating anything out of the ordinary or foods that I don’t like! I make a VERY simple weekly meal plan and stick to it! We eat every 2-3 hours, with a specific food set up around when we workout, in order to fuel our workouts, so we can power through them! For breakfast, or my pre-workout meal – since I workout in the morning, I am eating eggs {protein}, peppers and mushrooms {a veggie}, and whole grain toast {carb}. You don’t have to eat foods you don’t like or have a plan that is complicated or cook two meals for your family. My farmer is still eating similar to me! For example, when we have spaghetti, I make myself whole grain noodles or spaghetti squash and him regular pasta noodles. Nothing crazy because I am the QUEEN of SIMPLE!

Yes, I even got to make healthy chocolate chip cookies that are approved on my meal plan! They count as 1.5 carbs during my day! Yumm!Β 

Have you seen any results?

I haven’t seen any major results, yet, but it’s only day 10! I always tell my girls so celebrate the small wins! Because the wight or inches that you put on, took longer than 10 days to get where you are! It’s also going to take longer than 10 days to see results! I can already see that I am STRONGER in my workouts than last week. I just feel more confident too! I can tell that my metabolism is speeding up and I am hungry when I am supposed to be eating. I can tell I am getting more toned throughout my body. My jeans for the most part, are still fitting the same. Not huge changes, but still have to celebrate the small wins! πŸ™‚


Victories are sticking to this for 10 days already! I haven’t skipped a workout or majorly cheated on my meal plan. I feel like I have more energy and confidence because of sticking to my plan! Making healthy choices when we have gone out to eat. Leading a group of amazing ladies, that are seeing SO much progress (from losing 15 inches in the first week to leggings fitting better), I am so proud of them! ❀


Mentally struggling through my workouts when I get tired. Last week, I experienced eating when I wasn’t at all hungry, but I feel hungrier this week, which means my metabolism is working better. Getting all of my food in during a day can be tough, but it is also about planning ahead and making the commitment to yourself and just knowing that you CAN do this!!
