This time of year I am all about baking and cooking! It’s just part of the coziness this time of year! I also haven’t been having an appetite, (most likely because of my rheumatoid arthritis medication), where nothing tastes good, but for some reason I was craving BBQ or Sloppy Joes. I don’t make then often because Taylor isn’t a huge fan, but I love them! Probably need to make them more, just for me! 😉
As we all know, I love the Pioneer Woman. I am serious about her, she gets DVR-ed in our house! There is something so relaxing about watching a good cooking show, and I can totally relate to her story. Having a hungry farmer and rancher to feed, so I need quick and easy, but also healthy – for me! So I decided to tackle Ree’s recipe!
Of course, in true Alecia fashion, I had to do things my own way, and make it a little healthier, but it turned out SO yummy, and it was easy!
What You will Need:
- 1lb ground beef
- 1/2 cup diced onion, frozen or fresh
- 1 whole red sweet pepper diced
- 2 large cloves of garlic, minced
- 3/4 cup of Ketchup
- 1 tablespoon of Stevia Brown Sugar
- 1 teaspoon chili power
- 1/2 teaspoon dry mustard
- 1/4 teaspoon of red pepper flakes
- 3-4 dashes of Worcestershire Sauce
- Salt and Pepper to taste
- Bib Lettuce or Romane in cups
- Cheddar shredded cheese
In a large skillet, brown burger, season with salt and pepper. Once browned, turn heat to low and add in onion, pepper, garlic and Ketchup. Combine well and let simmer for 3 minutes, until onion, pepper, and garlic are soft. Combine Stevia, chili power, mustard – dry, pepper flakes. Add in a few dashes of Worcestershire Sauce and salt and pepper to taste. Let simmer and stir for another couple of minutes. Remove from heat and let stand for 2 minutes. During this time, you can get the lettuce cups ready and dish up the sloppy joes into the cups. Top with cheddar cheese.
